Grilled Cheese with Caramelized Onions
Makes 2 Sandwiches
1 lg. yellow onion, cut in half and thinly sliced
4 1-” slices boule or country-style bread
6 oz. Gruyère cheese, sliced
2 oz. Parmigiano-Reggiano, grated
2 Tbsps. whole grain mustard
2 Tbsps. unsalted butter
2 Tbsps. extra-virgin olive oil
1. Prepare onions: Heat 2-3 Tbsps. olive oil in large sauté pan over low heat; add onion; season; sweat for 20 minutes; raise heat to medium; cook until slightly golden (about 10 more minutes); remove from heat; reserve.
2. Assemble sandwiches: on 1 slice of bread, layer 3 oz. Gruyère, 1 oz. Parmigiano-Reggiano, and half of reserved caramelized onions; spread 1 Tbsp. mustard on second slice of bread; close; repeat for second sandwich; melt butter and olive oil in large non-stick sauté pan over medium-low heat; add sandwiches; cover; cook until bread is golden-brown, about 6-7 minutes; flip; cook until second side is golden brown and sandwich innards are melty, about 4-5 minutes; remove from pan; serve immediately.
