Sometimes my dinner doesn’t have to be the best dish I’ve ever created.
Sometimes I just do what’s easiest.
So I go through my pantry, generally taking a starch, a fruit or vegetable, a cheese, and some kind of oil or vinegar.
And so last week, I made the recipe below.
Cous Cous with Feta & Figs
1.5 cups Israeli cous cous, cooked
8 oz. feta cheese, cut into 1”- cubes
6 oz. dried kalamata figs, chopped
black pepper, freshly ground
In large mixing bowl, toss cous cous, feta, and figs; season to taste; toss with 1-2 Tbsps. balsamic vinegar; serve immediately.
